Olive oil is a great alternative to butter. It makes such a delicious and moist cake. This recipe is vegan and could be gluten-free by using a 1:1 gluten-free flour instead of all-purpose flour. Olive oil cake is by far one of my favorite desserts and a great way to end a dinner party. Enjoy!
Recipe:
- 3 cups all-purpose flour (substitute 1:1 gluten-free flour optional)
- 2 cups white granulated sugar
- 6 tbs cocoa powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 3/4 cup extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp vanilla extra
- 2 cups cold water
- Preheat the oven to 350F.
- Sift flour through a sieve.
- In a small bowl, combine flour, sugar, cocoa powder, salt & cinnamon.
- In a larger bowl, combine olive oil, apple cider vinegar, vanilla & cold water.
- Slowly incorporate the dry ingredients into the wet ingredients.
- Pour into a 9in. cake pan. Bake for 30-40 minutes or until done.
- Cool and dust powdered sugar over right before serving.
